Delicious Air Fryer Beef Taquitos filled with seasoned ground beef, melted cheese, and veggies, wrapped in crispy corn tortillas.

- 1 ½ Pounds ground beef (lean)
- 1 onion (chopped)
- 1 bell pepper (green, chopped)
- 2 Tablespoons garlic powder
- 1 Tablespoon ground paprika
- 3 Tablespoons olive oil (for sautéing)
- 1 Pinch salt
- 1 Pinch black pepper
- 2 eggs
- 24 corn tortillas (soft)
- 2 Cups marble cheese (shredded)
- Nonstick cooking spray
- Salsa
- Guacamole (or sliced avocado)
- Cilantro
- Sour cream
- Hot sauce
- Iceberg lettuce
- Cotija cheese (crumbled)
Instructions
- Cook the Vegetables: In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion and bell pepper. Sauté until softened, about 3-4 minutes.
- Brown the Beef: Push the vegetables to the side and add the ground beef to the skillet. Break it apart with a spatula and cook until browned.
- Season the Mixture: Add the garlic powder, paprika, salt, and black pepper to the beef mixture. Stir everything together and let it cook for another 2 minutes.
- Add the Eggs and Cheese: Remove the skillet from heat and mix in the two beaten eggs and shredded marble cheese until well combined. Set the filling aside to cool.
- Prepare the Tortillas: Warm the corn tortillas in a microwave or on a skillet for a few seconds until they are pliable.
- Fill the Tortillas: Take a tablespoon of the beef filling and place it on one side of the tortilla. Roll it tightly, folding in the sides as you go. Repeat this process for all tortillas.
- Secure the Taquitos: Place the rolled taquitos seam-side down on a plate. You can use toothpicks to keep them together if needed.
- Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C).
- Spray the Taquitos: Lightly coat each taquito with nonstick cooking spray for an extra crispy finish.
- Cook in Air Fryer: Place the taquitos in a single layer in the air fryer. Cook for 8-10 minutes or until golden brown and crispy.
Notes
Serve with various toppings like salsa, guacamole, and sour cream. Store leftovers in the refrigerator for up to 3 days.
