Ingredients
For the Birria Beef:

2 Tbsp avocado oil

3–4 lb chuck roast, cut into large chunks

1 (7 oz) can chipotle peppers in adobo

1 cup diced tomato (canned or fresh)

1 medium onion, chopped

4 cloves garlic, smashed and chopped

1 Tbsp ground cumin

1 Tbsp dried oregano (Mexican oregano preferred)

2 tsp smoked paprika

1 tsp ground cinnamon (Mexican cinnamon preferred)

¼ tsp ground cloves

2 bay leaves

2 cups beef broth

⅓ cup red wine vinegar or white vinegar

Salt, to taste
For Serving:

Corn tortillas

Chopped cilantro

Diced white onion

Shredded Mexican or cheddar cheese (optional)

Instructions
1. Sear Beef:
Heat avocado oil in a heavy pot over medium-high. Brown chuck roast chunks on all sides.
2. Add Aromatics & Spices:
Add onion and garlic; cook 1 min. Stir in cumin, oregano, paprika, cinnamon, cloves, and salt—toast 1 min.
3. Build Sauce & Simmer:
Add chipotles with sauce, tomatoes, vinegar, bay leaves, and broth. Simmer 2½–3 hrs until beef shreds easily. Discard bay leaves.
4. Shred Beef:
Shred meat in the pot and stir into juices to keep moist.
5. Preheat Air Fryer:
Preheat to 375 °F for 3–5 min.
6. Assemble Tacos:
Dip each corn tortilla in consommé. Add shredded beef and cheese (optional). Fold and lightly press.
7. Air Fry:
Lightly spray tacos with oil. Air fry 6–8 min, flipping halfway, until crispy and golden.
8. Serve:
Garnish with cilantro, onion, and lime. Serve alongside consommé for dipping.
