Description

A moist and tender carrot cake made in the air fryer, combining the sweetness of carrots with warm spices for a delightful dessert.


Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Combine the grated carrots, sugar, and vegetable oil until well mixed.
  2. Add the two large eggs and mix thoroughly.
  3. Prepare the dry ingredients by whisking flour, baking powder, baking soda, cinnamon, and salt in another bowl.
  4. Combine the dry mixture with the wet ingredients gradually, stirring gently.
  5. Add the optional walnuts and raisins if desired.
  6. Preheat the air fryer to 320°F (160°C).
  7. Pour the batter into a greased cake pan that fits your air fryer.
  8. Air fry the cake for about 25-30 minutes or until a toothpick comes out clean.
  9. Cool the cake in the pan before transferring to a wire rack.

Store the cake in an airtight container at room temperature for up to three days or refrigerate for up to a week.
