- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
Instructions
- Combine the grated carrots, sugar, and vegetable oil until well mixed.
- Add the two large eggs and mix thoroughly.
- Prepare the dry ingredients by whisking flour, baking powder, baking soda, cinnamon, and salt in another bowl.
- Combine the dry mixture with the wet ingredients gradually, stirring gently.
- Add the optional walnuts and raisins if desired.
- Preheat the air fryer to 320°F (160°C).
- Pour the batter into a greased cake pan that fits your air fryer.
- Air fry the cake for about 25-30 minutes or until a toothpick comes out clean.
- Cool the cake in the pan before transferring to a wire rack.
