Description

A healthier twist on classic chicken schnitzel, prepared in an air fryer for a crispy and juicy result.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably panko)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil (for spraying)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Pound the chicken breasts to an even thickness of about 1/2 inch.
  2. Set up a breading station with flour, beaten eggs, and breadcrumbs mixed with salt, pepper, and paprika.
  3. Preheat the air fryer to 200°C (400°F) for about 5 minutes.
  4. Coat each chicken breast with flour, dip in the eggs, then coat well with breadcrumbs.
  5. Lightly spray the air fryer basket with olive oil and arrange the breaded schnitzels in a single layer.
  6. Air fry the chicken for 10-12 minutes, flipping halfway through, until golden and cooked through.
  7. Garnish with fresh parsley and serve hot.

Notes

For the best crunch, use panko breadcrumbs. Do not overcrowd the air fryer for even cooking.
