A healthier twist on classic chicken schnitzel, prepared in an air fryer for a crispy and juicy result.

- 2 large boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably panko)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil (for spraying)
- Fresh parsley (for garnish, optional)
Instructions
- Pound the chicken breasts to an even thickness of about 1/2 inch.
- Set up a breading station with flour, beaten eggs, and breadcrumbs mixed with salt, pepper, and paprika.
- Preheat the air fryer to 200°C (400°F) for about 5 minutes.
- Coat each chicken breast with flour, dip in the eggs, then coat well with breadcrumbs.
- Lightly spray the air fryer basket with olive oil and arrange the breaded schnitzels in a single layer.
- Air fry the chicken for 10-12 minutes, flipping halfway through, until golden and cooked through.
- Garnish with fresh parsley and serve hot.
Notes
For the best crunch, use panko breadcrumbs. Do not overcrowd the air fryer for even cooking.
