Ingredients
For the Cauliflower Bites:

1 head cauliflower, cut into florets

½ teaspoon chili powder

½ teaspoon garlic powder

2 large eggs

¼ cup water

1 cup breadcrumbs (or panko for extra crunch)

Nonstick spray (for air fryer)
For the Blue Cheese Dip (optional):

¼ cup Greek yogurt

¼ cup mayonnaise

¼ cup crumbled blue cheese

Pinch of ground black pepper

Dash of hot sauce
Instructions

Prep the Cauliflower: Cut cauliflower into even-sized florets (1 to 1½ inches).

Season: Toss with salt, chili powder, and garlic powder.

Egg Wash: In a small bowl, whisk eggs with water. Pour over cauliflower and toss to coat.

Bread: Add breadcrumbs and toss again to coat thoroughly.

Preheat Air Fryer: Preheat to 350°F and spray basket with nonstick spray.

Air Fry: Place florets in a single layer and cook for 7 minutes. Flip and cook an additional 7 minutes. Repeat with remaining cauliflower.

To make vegan, replace eggs with flax eggs or aquafaba.
