Description

Crispy, cheesy broccoli fritters made in the air fryer for a healthy twist on a comfort-food favorite. Ready in just minutes—perfect as a snack, side, or appetizer!

Ingredients

Scale
  • 3 cups broccoli florets (fresh or thawed if frozen)

  • 1 egg

  • ½ cup Panko breadcrumbs

  • ¼ cup shredded Parmesan cheese

  • ½ cup sharp cheddar cheese, shredded

  • 2 garlic cloves, minced

  • ¼ cup green scallions, chopped

  • ½ tsp salt (or to taste)

  • ½ tsp ground black pepper (or to taste)

  • ½ tsp cayenne pepper (optional, or to taste)

  • ½ tsp paprika powder (optional, or to taste)

Instructions

  • Prep the broccoli: Steam or microwave florets until fork‑tender (about 4–5 minutes). Drain well and pulse in a food processor to coarse crumbs.

  • Make the mixture: In a large bowl, mix broccoli with egg, Panko, cheeses, garlic, scallions, salt, pepper, cayenne, and paprika until the mixture holds when pressed.

  • Form fritters: Shape into 2–3″ rounds, about ½″ thick.

  • Preheat air fryer: Set to 375 °F and let it warm up for 3 minutes. Lightly spray or grease the basket.

  • Air fry: Cook fritters in a single layer for 10–12 minutes, flipping halfway, until crispy and golden. Avoid overcrowding—cook in batches.

  • Serve: Enjoy warm with your favorite dipping sauce—ranch, sriracha mayo, aioli, or tzatziki work great!

Notes

Make‑ahead: Shape fritters and refrigerate for up to 24 hrs before frying.

Freezer options: Freeze uncooked fritters flat, then transfer to a bag. Cook from frozen at 350 °F until heated through and crisp.

Dairy‑free swap: Use dairy‑free cheese or add nutritional yeast.

Gluten‑free swap: Use gluten‑free breadcrumbs or almond flour.
