Description

These Air Fryer Korean BBQ Beef Short Rib Tacos are packed with sweet-savory flavor, quick to make, and perfect for fusion food lovers. Bold, easy, and air-fried to perfection!

For the Marinade:

  • 1.5 lbs Korean-style beef short ribs (flanken cut)

  • 1/3 cup low-sodium soy sauce

  • 2 tbsp brown sugar

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tbsp gochujang

  • 2 tsp grated ginger

  • 3 cloves garlic, minced

  • 1 tbsp grated Asian pear or apple

For the Tacos:

  • 6 small corn or flour tortillas

  • 1 cup kimchi slaw or shredded cabbage

  • Fresh cilantro leaves

  • Lime wedges

  • Optional: pickled red onions, sesame seeds, scallions


Instructions

  • Whisk together marinade ingredients in a bowl.

  • Pour over short ribs and marinate for at least 30 minutes (overnight preferred).

  • Preheat air fryer to 400°F (200°C).

  • Place ribs in air fryer basket; cook for 8–10 minutes, flipping halfway.

  • Remove and let rest; then slice or shred meat from bones.

  • Warm tortillas. Assemble tacos with meat, slaw, and toppings.

 

  • Serve with lime wedges and enjoy immediately.

Notes

For extra crispiness, blot excess marinade from ribs before air frying.

Substitute tofu or mushrooms for a vegetarian version.
