Ingredients
For the Marinade:

1.5 lbs Korean-style beef short ribs (flanken cut)

1/3 cup low-sodium soy sauce

2 tbsp brown sugar

1 tbsp sesame oil

1 tbsp rice vinegar

1 tbsp gochujang

2 tsp grated ginger

3 cloves garlic, minced

1 tbsp grated Asian pear or apple
For the Tacos:

6 small corn or flour tortillas

1 cup kimchi slaw or shredded cabbage

Fresh cilantro leaves

Lime wedges

Optional: pickled red onions, sesame seeds, scallions
Instructions

Whisk together marinade ingredients in a bowl.

Pour over short ribs and marinate for at least 30 minutes (overnight preferred).

Preheat air fryer to 400°F (200°C).

Place ribs in air fryer basket; cook for 8–10 minutes, flipping halfway.

Remove and let rest; then slice or shred meat from bones.

Notes
For extra crispiness, blot excess marinade from ribs before air frying.
