Ingredients

10–12 medium cremini or baby bella mushrooms

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 large red onion, cut into wedges

1 tablespoon soy sauce or tamari

2 garlic cloves, minced

1 teaspoon smoked paprika

Instructions

Soak wooden skewers in water for 15–30 minutes (skip if using metal).

Clean and dry the mushrooms. Chop veggies into 1-inch chunks.

In a bowl, whisk together olive oil, soy sauce, garlic, paprika, salt, and pepper.

Toss the vegetables in the marinade and let sit for at least 10 minutes.

Thread mushrooms, peppers, and onions onto skewers.

Preheat air fryer to 375°F (190°C).

Arrange skewers in the basket, avoiding overlap.

Cook for 10–12 minutes, flipping halfway, until golden and slightly charred.

Notes
For extra char, increase temp to 400°F in the last 2 minutes.
