Description

Ingredients

  • 1 ½ cups plain Greek yogurt (2% or full-fat)

  • 2 large eggs (room temperature)

  • ⅓ cup vanilla protein powder (whey or plant-based)

  • ¼ cup almond flour

  • ¼ cup granulated sweetener (stevia, monk fruit, or erythritol)

  • 1 tsp vanilla extract

  • 1 tsp lemon juice or zest (optional)

  • Pinch of salt

  • Cooking spray (for greasing the pan)



Instructions

  1. Line a 6–7 inch air fryer-safe cake pan with parchment paper and spray lightly with oil.

  2. In a mixing bowl, whisk together Greek yogurt, eggs, sweetener, vanilla extract, and lemon juice/zest.

  3. Stir in protein powder and almond flour until smooth and well combined.

  4. Pour batter into the prepared pan. Tap gently to release air bubbles.

  5. Preheat air fryer to 300°F (150°C) for 3 minutes.

  6. Cook cheesecake for 20–25 minutes or until the edges are set and the center is slightly jiggly.

  7. Let cool in the pan for 15 minutes, then refrigerate for at least 3 hours (or overnight).

Notes

Use baking-friendly sweeteners like erythritol or monk fruit for best texture.
