These bold, fluffy Air Fryer Spicy Mini Omelettes are the perfect grab-and-go breakfast. Packed with protein, vibrant veggies, and just the right kick of spice, they’re ready in under 15 minutes and great for meal prep!
Ingredients

4 large eggs

1–2 tbsp diced chilies or jalapeños

¼ cup bell peppers, finely chopped

2 tbsp onions, finely chopped

¼ cup shredded cheddar or pepper jack cheese

Salt, black pepper, and turmeric (to taste)

Optional: ¼ cup chopped spinach, cherry tomatoes, or mushrooms

Non-stick spray (for molds)
Instructions

Preheat air fryer to 350°F (175°C).

In a bowl, whisk eggs with salt, pepper, and turmeric until frothy.

Fold in diced chilies, bell peppers, onions, and cheese.

Spray silicone molds or ramekins with non-stick spray and fill each ¾ full.

Place molds in air fryer and cook for 10–12 minutes, or until set and puffed.

Let cool slightly, remove from molds, and serve warm.
Notes
Use silicone muffin cups for easy release and no cleanup.
Adjust spice level by adding more or less chili or using pepper jack cheese.
Store leftovers in an airtight container for up to 4 days or freeze for 2 months.
