Ingredients

Scale
  • 4 large eggs

  • 12 tbsp diced chilies or jalapeños

  • ¼ cup bell peppers, finely chopped

  • 2 tbsp onions, finely chopped

  • ¼ cup shredded cheddar or pepper jack cheese

  • Salt, black pepper, and turmeric (to taste)

  • Optional: ¼ cup chopped spinach, cherry tomatoes, or mushrooms

  • Non-stick spray (for molds)

Instructions

  • In a bowl, whisk eggs with salt, pepper, and turmeric until frothy.

  • Fold in diced chilies, bell peppers, onions, and cheese.

  • Spray silicone molds or ramekins with non-stick spray and fill each ¾ full.
