Delicious and healthy air fryer stuffed peppers packed with rice, beans, corn, and spices.
Ingredients

- 4 bell peppers
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 cup diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- Prepare the peppers by cutting the tops off and removing the seeds.
- Mix the filling in a bowl with rice, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
- Stuff each pepper with the filling, packing it down well.
- Place the stuffed peppers in the air fryer basket without overcrowding.
- Cook for about 12-15 minutes, or until the peppers are tender.
- Add cheese on top if desired and cook for an additional 2-3 minutes until melted.
- Garnish with fresh cilantro before serving.
Notes
Serve hot or at room temperature with a side of salad or salsa. Can be customized with different fillings based on your preference.
