Description

Crispy on the outside, tender on the inside—these Air Fryer Stuffed Zucchini Fritters are a healthy and delicious way to enjoy your veggies. Perfect as a snack, side dish, or light meal, they’re easy to make, endlessly customizable, and ready in under 30 minutes.


Ingredients

  • 1 medium zucchini, grated and squeezed

  • 1 medium carrot, grated

  • 2 eggs

  • 1 cup panko breadcrumbs (or gluten-free alternative)

  • ½ tsp garlic powder

  • 2 tsp salt

  • 1 tsp black pepper

  • 1 tbsp olive oil (for brushing or spraying)


Instructions

  1. Grate zucchini and carrot. Squeeze out excess moisture from zucchini.

  2. In a bowl, combine all ingredients except olive oil. Mix well.

  3. Chill the mixture for 10–15 minutes (optional).

  4. Preheat air fryer to 375°F (190°C).

  5. Form the mixture into 8–10 small fritters.

  6. Brush or spray with olive oil and place in air fryer basket.

  7. Cook for 10–12 minutes, flipping halfway, until golden brown.
