Ingredients

1 medium zucchini, grated and squeezed

1 medium carrot, grated

2 eggs

1 cup panko breadcrumbs (or gluten-free alternative)

½ tsp garlic powder

2 tsp salt

1 tsp black pepper

1 tbsp olive oil (for brushing or spraying)
Instructions

Grate zucchini and carrot. Squeeze out excess moisture from zucchini.

In a bowl, combine all ingredients except olive oil. Mix well.

Chill the mixture for 10–15 minutes (optional).

Preheat air fryer to 375°F (190°C).

Form the mixture into 8–10 small fritters.

Brush or spray with olive oil and place in air fryer basket.

Cook for 10–12 minutes, flipping halfway, until golden brown.
