These crispy Air Fryer Veggie Tots are made with sweet potato, kale, and bold seasonings for a healthy, kid-friendly snack you can whip up in minutes!
Ingredients

1 cup baked mashed sweet potatoes (skin removed)

2 cups chopped kale

1 egg

½ cup panko breadcrumbs

½ tsp garlic powder

½ tsp paprika

Salt and pepper to taste

Avocado oil spray
Instructions

Pulse chopped kale in a food processor until finely flaked.

In a large bowl, mix mashed sweet potato, kale, egg, panko, garlic powder, paprika, salt, and pepper.

Form mixture into small tot-shaped rounds using a tablespoon scoop.

Spray air fryer basket with avocado oil and arrange tots in a single layer.

Lightly spray the tops of the tots with oil.

Air fry at 400°F for 10–15 minutes, flipping halfway, until golden and crispy.

Serve with your favorite dipping sauce and enjoy!
Notes
Makes about 20 tots.
Use a flax egg for a vegan version.
