Description

These crispy Air Fryer Veggie Tots are made with sweet potato, kale, and bold seasonings for a healthy, kid-friendly snack you can whip up in minutes!


Ingredients

Scale
  • 1 cup baked mashed sweet potatoes (skin removed)

  • 2 cups chopped kale

  • 1 egg

  • ½ cup panko breadcrumbs

  • ½ tsp garlic powder

  • ½ tsp paprika

  • Salt and pepper to taste

  • Avocado oil spray


Instructions

  • Pulse chopped kale in a food processor until finely flaked.

  • In a large bowl, mix mashed sweet potato, kale, egg, panko, garlic powder, paprika, salt, and pepper.

  • Form mixture into small tot-shaped rounds using a tablespoon scoop.

  • Spray air fryer basket with avocado oil and arrange tots in a single layer.

  • Lightly spray the tops of the tots with oil.

  • Air fry at 400°F for 10–15 minutes, flipping halfway, until golden and crispy.

 

  • Serve with your favorite dipping sauce and enjoy!

Notes

Makes about 20 tots.

Use a flax egg for a vegan version.

Great for freezing—air fry straight from frozen with 2–3 extra minutes.

Try with spinach, riced cauliflower, or shredded carrots as veggie swaps.
