Description

Crispy, healthy zucchini fries made in an air fryer, perfect as a snack or side dish.


Ingredients

Scale
  • 2 medium zucchini
  • 1 large egg
  • 1/3 cup blanched almond flour
  • 1/2 cup shredded parmesan cheese
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Olive oil cooking spray

Instructions

  1. Cut the zucchini into sticks that are roughly 3-4 inches long and about 1/2 inch thick.
  2. Prepare the coating mixture: whisk the egg in one bowl and mix almond flour, parmesan, garlic powder, paprika, parsley, salt, and pepper in another.
  3. Coat each zucchini stick in the egg mixture, then roll it in the almond flour mixture.
  4. Preheat the air fryer to 400°F, spray the basket with olive oil, and place the fries in a single layer.
  5. Cook for 4 minutes, flip, spray again, and cook for another 4 minutes until golden and crispy.

Notes

Best served fresh with dipping sauces like marinara or ranch dressing.
