Description
Crispy, healthy zucchini fries made in an air fryer, perfect as a snack or side dish.
Ingredients

- 2 medium zucchini
- 1 large egg
- 1/3 cup blanched almond flour
- 1/2 cup shredded parmesan cheese
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried parsley
- 1 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- Olive oil cooking spray
Instructions
- Cut the zucchini into sticks that are roughly 3-4 inches long and about 1/2 inch thick.
- Prepare the coating mixture: whisk the egg in one bowl and mix almond flour, parmesan, garlic powder, paprika, parsley, salt, and pepper in another.
- Coat each zucchini stick in the egg mixture, then roll it in the almond flour mixture.
- Preheat the air fryer to 400°F, spray the basket with olive oil, and place the fries in a single layer.
- Cook for 4 minutes, flip, spray again, and cook for another 4 minutes until golden and crispy.
Notes
Best served fresh with dipping sauces like marinara or ranch dressing.
